The caper plant starts to produce its first buds during May which indicates the beginning of the harvest season that lasts till August.

The caper buds of the shrub like plant are harvested early in the morning by hand. During their seasonal life spans, capers plants go through the bud (caper), flower and lastly fruit (caper berries) phases.

Every caper plant has its own biological clock and it is challenging to harvest the right plant at the right moment.
